EVIL BURRITOS: make a ton of healthy frozen burritos!

There is something about a cheap microwave burrito that always hits the spot. I think those Evol cilantro lime frozen burritos are pretty good and they seem to have simple, healthy ingredients. I bought one one day and I thought, “I could make these”–so I did. What I ended up with tastes a little better (to me) than the real thing, because I could go nuts on cilantro and salsa. This is also kind of nice because you’re not sending your money to a soulless corporate behemoth. All the steps and measurements are approximate. They are really just suggestions. It’s easy to see how you could fix it differently to your own individual preference and make it your own. Here’s how to do a whole pile of frozen burritos for a bunch of easy, healthy, cheap lunches:

Chicken ingredients: If you are vegan or vegetarian you could probably try something similar with tofu or seitan (hail seitan) or what have you.
2 lbs. chicken (or whatever makes you happy)
4-5 tbsp fresh cilantro
2.5-5 tbsp lime juice
1.5-2 tbsp olive oil
Green peppers (1/2 to a whole green pepper)
Salt to taste

Other ingredients:
3 cups brown rice – if you’re not using a rice cooker, you can probably cut it down to 2.5 cups or so. I use 3 of those little 180 ml rice cooker cups.
1 can black beans
1 cup of frozen corn
1 container (about 12 oz) of your favorite tomato salsa – a nice citrusy, garlicy, cilantroey pico de gallo always works well, but use whatever you like.
A bag of shredded cheese (8-12 oz)
Whole wheat tortillas, organic if you like. A couple of packages. (16 about 9-10 inches diameter)
2-3 bottles of your favorite beer

Directions:
Cook 3 cups of brown rice and set it aside. Rice cookers work wonders for this step. If you have one, you are doing this shit right. 

Put it in a big-ass bowl.

To prepare chicken or other protein, combine protein, cilantro, lime juice and olive oil in a large bowl; toss and let it marinate for a while. 

Remove protein from marinade. Discard excess. Sprinkle evenly with salt.

Grill until done. If you’d like, cook it in a pan with some cooking spray on medium-high heat instead.

Before you’re done, throw some green peppers in there and get them tender-crunchy. If you’re grilling, you could grill a pepper and cut it up afterward or fry ’em separately.

Drink a beer while you do all this. Listen to Supercharger Goes Way Out (1993, Estrus Records).

If your protein  is not torn up into little pieces, do that. If you prefer to be nice and neat, cut it into dainty little cubes. Toss it in the rice. Eat as much as you’d like along the way. Don’t be fussy about this. 

Open a can of black beans. Drain. Rinse the black crud out. Dump it all in the rice.

Take about a cup or so of frozen corn. Zap it in a microwave according to the directions on the bag. Or don’t. Throw it in the rice.

Dump all 12 ounces of salsa in your rice. Why not? If you want more and you’ve got more, toss it in. Stir it all up. Good. 

Look at how much there is. Take a break and eat some of it if you’d like. Who cares? Have another beer.

You have a decision to make. Do you want to mix the cheese in with the rice, or are you going to apply it to each tortilla as you finalize this deal? If you decide to mix it all up, throw your cheese in there and stir. 

Tortilla time. Take a tortilla, pile up your burrito filling mixture, add cheese (if you haven’t already) and roll it up burrito style. My wife had to teach me how to do this. If you don’t know how or don’t have a friend or a significant other who knows how to roll burritos, Google it and apply your new-found knowledge to this task.

Repeat 11 to 15 times, until you are out of burrito filling or until you decide to just eat the rest of the stuff.

I wrap the burritos in aluminum foil. If you are paranoid about freezer smells creeping into your burritos, wrap them again in cling wrap and put them in freezer bags. Freeze them into delicious little frozen burritos. 

Later, when it’s time to eat one, microwave on high for 3 minutes or so. REMOVE THE FOIL of course. 

Sprinkle with whatever hot sauces, cilantros, guacs, onions or things you like. DONE!
